Cauliflower is an immune boosting vegetable! It's packed with Vitamin C. Just 1/2 cup cooked provides 45% of the recommended daily intake of Vitamin C. Since cauliflower is a cruciferous vegetable it may be harder to digest, especially for individuals with gastrointestinal issues. Roasting the cauliflower helps to aid digestion. You can also add one of my favorite spices, turmeric, which may increase activity of digestive enzymes. Turmeric has been associated with improved digestion by stimulating bile production and reducing bloating and gas.
