Cauliflower is an immune boosting vegetable! It's packed with Vitamin C. Just 1/2 cup cooked provides 45% of the recommended daily intake of Vitamin C. Since cauliflower is a cruciferous vegetable it may be harder to digest, especially for individuals with gastrointestinal issues. Roasting the cauliflower helps to aid digestion. You can also add one of my favorite spices, turmeric, which may increase activity of digestive enzymes. Turmeric has been associated with improved digestion by stimulating bile production and reducing bloating and gas. Check out the Backbeet approved recipe below!
- 1/4 cup extra virgin olive oil
- 2 teaspoons curry powder
- 2 teaspoons ground turmeric
- Sea salt and ground pepper to taste
- 2-3 heads small cauliflower (~ 2 lbs), cut into florets
- Non-stick olive oil cooking spray
Preheat oven to 375 degrees. Coat a rimmed baking sheet with cooking spray. In a large bowl, stir oil and spices together. Add cauliflower and toss to coat with spice mixture.
Arrange cauliflower in a single layer on baking sheet. Roast until florets are browned on bottom and tender, about 35 minutes. Serve hot.
